48 hours is the minimum to influence glycogen stores to any significant degree.
I would actually re-induce low-carb after about 48 hours (strict) into late Sunday for possibly the "best" results.
Certainly compliance will be up to you though.

There are other forms of manipulation that DO work outside of this particular run. You should NOT be packing on "fat" in a short recomp like this - there is obvious issues with the way you are cycling macros.

You still have to keep in mind various caloric demands. Fats are calorically-dense and because you resume a low-carb subset into Sunday afternoon does NOT mean you have to eat "high-fat" meals.
