Skin baby!! Chop them up, stick them in a bowl. Drizzle some olive oil over them, bake in oven until flesh is soft. yum!
Or here is a no skin recipe for you. Microwave until soft. Scrape out the flesh and put into a bowl. Mix in some natty peanut butter until the mixture is qutie stiff but still moist. Then add some fried onion, pepper and garlic. Roll into golfball size balls and then roll in sesame seeds. Flaten onto baking tray and bake until they start going brown on the outside.
They make great little snacks to carry around if your going out for the day!
