I think you're the only person I've "met" that has ate the ginger.... I just use wasabi, which has little to no actual wasabi in it in the first place. If you go to a "real" sushi joint, they grind the wasabi root on a shark bone (I think, it may be a different bone from an animal) in front of you. And the weirdest thing is that real wasabi isn't really "hot" as that paste wasabi crap that most people use.
