I don't have any vegetarian experience, but some ideas:
- Some suitable sources of protein might be nuts or hemp protein, but that could get expensive also.
- Lentils might be a cheap protein source.
- The stuff you can read about excessive soy use is pretty terrible.
- Maybe instead of a carb restriction diet at first you change the type of carbs she is allowed to eat. Replace high GI carbs with low GI carbs. You can see some dramatic changes in people when they start doing this. In most cases, if you hit a person with an advanced diet too fast, they'll probably be turned off and give up.
- If she's already low GI, just lower calories slightly and begin the training routine. Can't fail with that, unless you lower calories too much.
