HIGH PROTEIN MUFFINS
Ingredients:
-2 c. soy flour
-1 c. dry powdered milk
-1 tsp. salt
-1 tsp. baking powder
-1 c. chopped dates or raisins
-1 c. chopped nuts
-3 slightly beaten eggs
-3 tbsp. melted butter
-Grated rind of 1 orange
-1/4 tsp. grated lemon rind
-3/4 c. orange juice
-3 tbsp. honey
Instructions:
1. Combine dry ingredients.
2. Add dates or raisins and nuts.
3. Combine remaining ingredients and stir into dry ingredients just until moistened.
4. Fill muffin tins 2/3 full.
5. Bake at 350 degrees for 20-25 minutes.
