One thing I would recommend if your using a Waxy maize, or similiar product see if they post the molecular weight, and then look @ the texture, if its really powdery like flour "its probably not processed, and basically its just corn startch!!".

Mixing protein with your carbs is great idea for a meal replacement, but if your wanting to get the carrier aspect of the carbs, protein dilutes it. BCAA's, Creatine, etc are a great thing to add though.
