I think I know what you mean. I feel I'm pretty sensitive to carbs also.
But I would think insulin to be the main factor in fat storage on a caloric surplus. A reasonable amount of low GI carbs instead of so much fat would probably improve your performance significantly.
Isn't also possible on that kind of diet for your protein intake to actually be partially converted to glucose? You might be wasting a lot of the protein?
I've had good results on the 33/33/33 split. Maybe you could try something like that or maybe put the carbs down to 20.
